MINT AND HONEY GLAZED ROAST LAMB #ad

The sweet smell of this mint and honey glazed roast lamb slowly cooking in the oven reminds me of Sunday mornings as a child in Wales. This recipe was definitely a favourite in our house growing up – and is one I still love making for my own family now. I’m sharing it as part of the Family Favourite campaign, sponsored by Welsh Lamb.

What’s great about lamb is that it’s naturally rich in protein, low in salt and provides seven essential vitamins and minerals that supports good health and wellbeing. These are: niacin (vitamin B3), vitamins B6 and B12, zinc, potassium, phosphorus and pantothenic acid.

This roast lamb recipe could not be quicker or easier to prepare; all you need is three simple ingredients and lots of time, as this lamb is cooked low and slow, until it literally falls off the bone. I usually make this on the weekend so we normally use the (cooking) time to go out for a family walk, watch a film or get on with the dreaded homework.

Here’s what you’ll need…

Ingredients

Half a leg of Welsh Lamb

2 tbsp mint sauce

2 tbsp runny honey

100ml water

Method

1.Pre-heat the oven to 140 degrees.

2. Place the leg of lamb onto a roasting tray and slice a few slits along the top, before pouring the water over the top.

3. Mix together the honey and mint sauce, then spoon the mint mixture onto the lamb, making sure it’s well covered.

4. Cover the whole roasting tray with foil or use a lid if you have one.

5. Now place the lamb into the oven and roast for three hours (at 140 degrees) – until the meat falls off the bone.

6. After three hours take the lamb out of the oven and leave to rest for a few minutes before removing the foil (or lid) and placing onto a large plate or board to carve.

7. Lastly, serve with your favourite vegetables; I normally go for mash potatoes, creamed leeks (staying with the Welsh theme) and cabbage, green beans or broccoli.
